Chardonnay Reserve is the flagship white wine of Beykush, crafted from selected vineyard parcels where the vines yield the most concentrated fruit. Hand-picked in mid-September with rigorous cluster selection — only the finest make it into this wine.
After cold maceration for 12 hours at 4°C and pressing, the juice goes not into steel tanks but directly into French oak barrels for fermentation. Barrel fermentation is the fundamental difference from Beykush's regular Chardonnay: when yeast work in contact with wood, the wine achieves deep integration of oak notes from the very start, rather than receiving them as a surface layer during aging.
After fermentation, the wine is racked from gross lees and returned to the same barrels for aging on fine lees with regular batonnage for 15 months. This extended lees aging with stirring produces a wine of multi-layered texture, where oak, fruit, and creamy softness merge into a seamless whole.
