Pinot Noir Reserve is the only red wine in the Beykush range and one of the most complex in terms of production. The grapes are hand-picked at the end of September, when Pinot Noir berries reach optimal ripeness in the Black Sea climate.
After crushing, the grapes go to fermentation simultaneously in two types of vessels: small stainless steel tanks and open-top oak vats. Each Pinot Noir clone is fermented and aged separately — this allows the winemaker to reveal the character of every clone with maximum precision, then create the final blend from the best components. Dual fermentation in steel and open-top oak adds extra complexity: steel preserves the purity of fruit tones, while open-top oak vats provide gentle extraction and micro-oxygenation.
After completion of both alcoholic and malolactic fermentation, the wine is pressed, settled, racked, and transferred to French oak barrels for 17 months of aging. Extended barrel aging builds an elegant structure with silky tannins. The final assemblage of individual lots is the moment when the wine's definitive character is born.

Tasting Notes
It starts, like any spectacular show, with a light smoke aroma, followed by dried cherries and other berry luxuries. It tastes like strawberries with licorice, mulberry, which melts in your mouth, and a little pepper to balance the berries. Drinking without food is even more interesting. However, who are we to deprive your duck or rabbit baked in herbs of such an appropriate red.
