Clusters cut from a vine are hung in a special ventilated room for a period of time. For a few weeks, the grapes lose moisture, while the concentration of sugar (and therefore concentration of alcohol), aromatic, colored and phenolic substances increases proportionally. Геологічно це частина рівнинного водороздільного плато між Бузьким та Березанським лиманами Південного степу, із сформованими темно-каштановими суглинковими грунтами. Кожен з трьох клонів Піно Нуар, висаджених на двох різних ділянках, збирається вручну і виніфікується окремо, в ємностях зі сталі та дуба. Випускається тільки у виняткові роки. Останній випуск: 2015 р. 24 місяці в бочках з французького дуба. Запечена качка, кролик в травах.
