1/3 of the wine was fermented with the seeds and skins , according to the red technology, 1/3 was pre-fermented maceration during the day, 1/3 was fermented according to the white technology.
More than 24 months in oak barrels.
Risotto, grilled fish, snacks, cheeses. Cool to 10-12 degrees.

Clusters cut from a vine are hung in a special ventilated room for a period of time. For a few weeks, the grapes lose moisture, while the concentration of sugar (and therefore concentration of alcohol), aromatic, colored and phenolic substances increases proportionally. After crushing, the grapes are fermented in open vertical oak barrels.
More than 24 months in American oak barrels.

Кожен з трьох клонів Піно Нуар, висаджених на двох різних ділянках, збирається вручну і виніфікується окремо, в ємностях зі сталі та дуба. Випускається тільки у виняткові роки. Останній випуск: 2015 р.
24 місяці в бочках з французького дуба.
